This course is intended to help farmers, vendors, food processors, households and other interested people with low cost, sustainable and highly viable food preservation, value addition and processing techniques. There is rampant food loss and wastage which is 40% at global level. According to FAO, almost 50% of fruits produced annually are lost and wasted globally. Food loss and wastage ranks third in the emitters of greenhouse gases causing climate change. There is rampant hunger and food shortage globally and food loss and wastage contribute immensely to this problem.
